A strategic component of our Bio-fermentation Programme

Coupled with our ETIC (EUROGERM Technological Innovation Center) R&D center, the bio-fermentation plant allows us to enter a new era for our company by becoming a producer and creator of distinctive, sustainable solutions to meet the current challenges facing the food industry.

A plant dedicated to bio-fermentation

Located on a 13,000-m² site in the heart of the Écoparc Dijon-Bourgogne business park in Saint-Apollinaire, Burgundy, our new plant dedicated to fermentation processes fills a 4,000-m² building and focusses on two major areas of production:

  • fermentation in a liquid medium for the production of sourdoughs, controlled by a single supervisor: a pilot pre-fermentation line and two industrial fermentation lines.
  • fermentation in a solid medium for the production of fermented cereals in dedicated workshop.

A project that fully integrates CSR

The chosen technologies combined with automation must contribute to more energy-efficient manufacturing methods by reducing the resource consumption of processes, boosting productivity, and reducing waste water from cleaning. The fermentation processes and most pipes are insulated to prevent heat loss. 100% of our waste is sorted, recycled, and reprocessed locally.

Hydroponics, an innovative technology : all washing effluents are treated using hydroponics (plants and microorganisms). This biological and eco-friendly solution will enable us to discharge rainwater-quality water and prepare for the future with the possibility of reusing the water.

The innovative fermented ingredients

The ingredients from our plant provide our customers with innovative solutions that will help them meet consumers’ high expectations for transparency, sustainability and healthier food. Our offerings will help them to reduce the carbon footprint and the list of ingredients of their finished products.

CRC®-accredited, the plant uses French cereals grown using biodiversity-friendly practices for the production of its two families of ingredients, labelled “created and produced in France by EUROGERM”.
